VEGGIE STIR FRY

A mix of colorful vegetables cooked with a flavor-packed sauce!

Ingredients

1 carrot
1 bulb of bok choy
1 celery stalk
1/2 bell pepper
1 large cauliflower floret
3 mushrooms
1-2 tablespoons olive oil
1 cup brown rice

Stir Fry Sauce
1 tablespoon freshly chopped ginger
2 cloves freshly chopped garlic
1/2 cup soy sauce
1 tablespoon honey
1/2 lemon

Instructions

1. Prepare the vegetables – Wash and chop all vegetables into bite-sized pieces.
2. Sauté the vegetables – Collect all chopped vegetables and place them in a pan with 1-2 tablespoons of olive oil over med-high heat. Cook until vegetables have softened and set aside.
3. Prepare the sauce – Sauté chopped garlic and ginger in a pan with a dash of olive oil. Add the soy sauce, honey, and lemon juice. Cook until ingredients are combined and sauce has thickened.
4. Coat the vegetables in the sauce, serve stir-fry over brown rice, and enjoy!
