ZOODLES AND MARINARA SAUCE

A healthy spin on pasta where noodles are made out of zucchinis!

Ingredients

Whole zucchinis (1 per serving)

Pasta Sauce
1 can whole Marzano tomatoes in juice
3 cloves chopped garlic
½ cup chopped onion
1 handful thyme
1 handful oregano
Olive oil
Salt and pepper
Parmesan cheese to taste

Instructions

1. Make zucchini noodles with spiralizer
2. Collect all noodles in a big mixing bowl with a paper towel at the bottom. Lightly salt zucchini and let sit for 10 minutes (while you make the marinara sauce)
3. Prepare sauce – Sauté garlic, onion, and whole canned tomatoes in a pan. Separate leaves of thyme and oregano from stems and add leaves to the pan. Add a dash of olive oil, three pinches of salt, and a sprinkle of pepper. Cook until combined.
4. Add in zucchini noodles to the pan, top with parmesan cheese, and serve.
